Raspberry Cocktails with Pinkster Gin

It has become a tradition to host a little Valentine’s Day collaboration with Pinkster Gin. Every winter leading up to Valentine’s Day I team up with them to share a few cocktail recipes and, of course, a bottle of their tasty pink gin. The giveaway details are at the end of this blog post.

Pinkster Gin is an all-natural gin which is both distilled and compound. The base spirit is distilled with five key gin botanicals, including juniper and black peppercorn, then after distillation, the gin is left to macerate with three more botanicals, including the legendary juicy raspberries. These raspberries are locally grown and selected with care. What I really love about Pinkster Gin is that even with its blush colour and the number of raspberries used, the gin is not sickly sweet, and the raspberries aren’t overpowering. The taste is slightly tart with subtle sweetness. Juniper is nicely present with a hint of pepper and coriander.

Pinkster G&T is recommended to be served with premium tonic water and garnished with juicy raspberries and fragrant mint. For me, it is the best serve when the weather is starting to change, and the sun is coming out, giving us all that spring buzz.

Cocktails to Try at Home

Which one of these raspberry cocktails is your favourite?

Marshmallow Gin Sour

60ml Pinkster Gin

20ml Fresh Lemon Juice

20ml Homemade Marshmallow Syrup*

3 Raspberries

Egg White (or vegan alternative)

Marshmallow for garnish

Muddle the raspberries at the bottom of your shaker. Measure the remaining ingredients into the shaker and dry shake (without ice). Add ice and strain again. Double strain into a coupe or an ice filled glass if you prefer it on the rocks. Garnish with a marshmallow.

*To make the syrup, simply add sugar and water to a saucepan. Toast the marshmallows under the grill or on a stick over an open flame on the stove. Once the sugar has dissolved, add the toasted marshmallows, a pinch of salt, and stir until the marshmallows have dissolved. Take off the heat and allow to cool down. Strain (there can be some pieces left floating so it’s better to strain) and store in the fridge.

45ml Pinkster Gin

22.5ml Sweet Vermouth (I used Cucielo)

22.5ml Dry Vermouth (I used Bordiga)

3 Raspberries

Muddle the raspberries in the bottom of the shaker. Measure remaining ingredients and shake well with ice. Double strain into a coupe.

Nuts About You

40ml Pinkster Gin

20ml Crème de Cacao (white)

30ml Coconut Milk (from a tin not the drinkable kind)

Pinch of Nutmeg (be careful not to use too much or it can be overpowering)

5ml Fresh Lemon Juice

3 Raspberries

Muddle the raspberries in the bottom of the shaker before measuring the remaining ingredients. Shake well with ice and double strain into an ice-filled tumbler. I like to double strain to remove the raspberry bits but it is optional. Garnish with raspberries.

Pink Collins

35ml Pinkster Gin

20ml Rosé Vermouth (I used Ferdinand’s)

15ml Fresh Lime Juice

A barspoon of syrup from Maraschino Cherries (I used The Starlino)

1 Cherry from the same jar

Soda Water

First measure all but soda directly into a highball glass. Add a few ice cubes and give it a little stir. Add more ice, top up with soda and give it a gentle stir. Garnish with the cherry.

Sweet Coconut

45ml Pinkster Gin

15ml Fresh Lime Juice

25ml Coconut Milk

15ml Marshmallow Syrup (see recipe above)

3 Raspberries
