National Margarita Day (22nd Feb) is here so let’s celebrate with some tasty Margarita cocktail variations. Not that we really need a specific day to enjoy a Margarita… These cocktails work well all year round.
Which one is your favourite?
1 Hibiscus Margarita Fizz
Hibiscus and tequila are a match made in cocktail heaven.
50ml Tequila (I used Patron Silver)
15ml Cointreau
10ml Hibiscus Syrup (I used Monin)
25ml Fresh Lime Juice
Champagne (or Prosecco)
Himalayan Salt rim, optional
Add Himalayan salt to the rim of the glass if using. Shake all but Champagne well with ice. Strain over ice and top up with the fizz.

2 Spicy Mango Margarita
The mango-infused tequila is amazing. Mango pairs well with Vivir as it has slightly floral flavour profile. I recommend using sugar-free mango slices for the infusion.
50ml Dried Mango-infused Blanco Tequila (I used Vivir)
15ml Red Chilli Syrup
10ml Cointreau
25ml Lime Juice
Salt & Chilli Flake rim
Create the salted rim on your cocktail glass. Shake all ingredients with ice and double strain.
To make a flavoured syrup for this Margarita cocktail, simply add sugar, water and red chillies to a saucepan. If you use berries, muddle them well to release all the flavour. Stir until the sugar has dissolved. Take off the heat, cover with a lid and leave to sit for 30 minutes. Strain and store.

3 Margarita Jam
50ml Tequila Blanco (I used Rooster Rojo)
20ml Pinkster Jam (adjust to taste)
15ml Cointreau
25ml Fresh Lime Juice
Coconut Water
In a cocktail shaker, combine all but coconut water and shake well with ice. Strain into an ice-filled tumbler and top up with coconut water. Garnish with frozen berries.

4 Juiced in Time Margarita
50ml Tequila Blanco (I used Espolón)
15ml Cointreau
15ml Campari
15ml Fresh Lime Juice
25ml Fresh Blood Orange Juice
Sugar Syrup (optional)
Salt & Chilli Flake rim
Coat the rim with salt and chilli flakes. Shake all ingredients together with ice and double strain into a fancy cocktail glass. No garnish needed.
Tip: Why not replace the blood orange with pink grapefruit?

5 Floral Margarita
50ml Tequila Plata (Pancho Datos)
15ml Prickly Pear Liqueur
15ml Elderflower Syrup
20ml Fresh Lime Juice
Shake all ingredients with ice and double strain into a cocktail glass.

6 Bitter Margarita
Amaro Amara is an amaro made from Sicilian blood oranges and herbs. I replaced Cointreau with it to create a more bitter recipe. It obviously works well with fresh juice as well.
40ml Storywood Tequila Scotch Cask Matured Reposado
20ml Amaro Amara
25ml Fresh Blood Orange Juice
15ml Fresh Lime Juice
5ml Agave Syrup
Himalayan Salt Rim
Add the salted rim on your cocktail glass. Shake all ingredients with ice and double strain.

7 Smoky Margarita
This is a variation of Celtic Margarita, which uses scotch whisky instead of tequila. I have used Bergamot liqueur (it’s delicious!) but you could also use Cointreau.
30ml Rock Island Whisky
20ml Tequila Plata (I used Pancho Datos)
20ml Bergamot Liqueur
20ml Fresh Lime Juice
7.5ml Agave Syrup
Add the salted rim on your cocktail glass. Shake all ingredients with ice and double strain.

8 Spicy Watermelon Margarita
50ml Tequila Blanco (I used Cazcabel)
25ml Cointreau
15ml Fresh Lime Juice
Watermelon Cubes
Green Chillies, sliced
Dash of Sugar Syrup (skip if the watermelon is very sweet)
Muddle watermelon cubes with tequila in the glass part of a Boston shaker. Add remaining ingredients and shake well with ice. Double strain over ice and garnish with extra chillies.
Tip: If you like a salty rim, this cocktail goes well with smoked chilli salt.
