Spiced Ginger Beer
Hollows and Fentimans alcoholic Spiced Ginger Beer, 4% ABV, is a versatile and fragrant drink. This gluten-free drink is strong enough on its own, served with ice and a lime wedge, and as it’s not too sweet or too spicy, it works well in cocktails (see winter cocktail recipes at the end). A lovely, but subtle, cardamom comes through nicely; in fact, the inspiration for this drink comes from exotic spices from the east. These gingerbread-like notes make you instantly long for Christmas!
Chinese ginger root is the main ingredient, creating a strong base for the beverage without being overpowering. This Spiced Ginger Beer won’t leave you disappointed, as there’s a nice warming after-kick, making the beverage complete, and, like all Fentimans products, Spiced Ginger Beer is ‘botanically brewed’ to get the most out of these eastern herbs.

What is ‘botanical brewing’ exactly?
I’m glad you asked. It’s a rare talent! Botanical brewing is a combination of infusions, blending and fermentation of natural ingredients. Thomas Fentiman’s original botanical brewing method takes seven whole days – there’s no rushing in botanical brewing as this time-honoured technique requires concentration and focus to guarantee a superior beverage.
First, the chosen botanicals are crushed and placed into copper steam-jacket pans to extract the finest elements of flavour. The botanical extract is then filtered into a wooden vat, where it is left overnight. This will help the live yeast to develop. The yeast is then removed the next morning and the live liquid is left to ferment in the wooden vat a while longer.
This is how Fentimans beverages have been brewed since 1905. It is this process that produces the depth of flavour, the sensation and rich texture which are the hallmark of Fentimans drinks today.

Wintery gingery cocktails to try!
Christmas Ginger
50ml vodka
15ml fresh lime juice
50ml pink grapefruit juice
25ml rosemary gomme*
75ml Hollows and Fentimans Spiced Ginger Beer
Fill a glass with ice. Shake all but ginger beer in a Boston shaker and strain over ice. Top up with spiced ginger beer and garnish with a sprig of rosemary.
*You can make rosemary gomme by mixing water, sugar and two sprigs of rosemary in a saucepan. Stir until the sugar dissolves and let it simmer for a few minutes. Let the mixture cool before using. Store in the fridge.
Ginger Beergarita
75ml Hollows and Fentimans Spiced Ginger Beer
25ml lime juice
35ml reposado tequila
15ml triple sec
15ml ginger gomme*
Lime wheel for garnish
Salt for the rim
Use a lime wedge to wet the rim of the glass, then dip the edge in the salt. Only do this for one half of the glass and make sure you remove the excess salt from inside the glass. Fill the glass with ice. Mix all but the spiced ginger beer in a Boston shaker and pour over ice. Top up with spiced ginger beer and garnish with a lime wheel.
*You can make ginger gomme at home by heating water, sugar and slices of fresh ginger in a saucepan. Stir it whilst the sugar dissolves. Let it simmer for a few minutes. After you have cooled it down, strain the liquid into a jug or a bottle. Store in the fridge.
Spicy Cranberry
1 inch fresh ginger, peeled and sliced
2 cinnamon sticks
½ teaspoon grated nutmeg (go easy on the nutmeg)
50cl cranberry juice (to be heated)
50ml cranberry juice (for the final cocktail)
50ml bourbon whiskey
50ml Hollows and Fentimans Spiced Ginger Beer
In a saucepan, add cranberry juice, ginger, cinnamon sticks and nutmeg. Let it simmer for 20 to 30 minutes, then check the flavour. Strain the mixture and let it cool down. Fill a glass with ice. Shake spiced cranberry mix with bourbon in a Boston shaker and strain over ice. Top up with spiced ginger beer and stir gently. You can amend the measures and make a cocktail jug to serve four. Garnish with grated nutmeg or cranberries.
Turmeric & Ginger
In 2016 turmeric is clearly having a moment. It is being used for literally everything, from omelettes to smoothies, so why not in cocktails too?
50ml gin
⅓ tsp turmeric
15ml fresh lime juice
Hollows and Fentimans Spiced Ginger Beer
