(Pink) Cocktails with Pinkster Gin

Pinkster Gin is one of the few pink gins that I enjoy on a regular basis, especially in the spring and summer months. Their perfect G&T serve with mint and raspberries is refreshing and ideal for the season. I thought it would be a nice idea to put together a blog post with some of my favourite cocktails with Pinkster Gin. Most of these have been featured on my Instagram feed or in some of the previous collaborations with the brand, but now you can easily find them in one place.

It seems that these recipes are more or less pink in colour, but that doesn’t mean the drink is sickly sweet. If you do like them sweeter, you can easily adjust the flavour profile by using more syrup or jam.

Raspberry French 75

25ml Pinkster Gin

25ml Pinkster Royale*

25ml Limoncello

Dash of lemon juice

Prosecco (or other sparkling wine)

In a cocktail shaker, combine all but the Prosecco and shake well with ice. Double strain into a Champagne flute and top up with the fizz. The limoncello is optional, but it adds a bit of sweetness to the drink as Pinkster Royale doesn’t have added sugar. Garnish with a lemon peel or a raspberry.

*Pinkster Royale can be replaced by Pinkster Jam Cocktail Mix – it goes perfectly with limoncello.

Pinkster Gin Fizz

Elegance (serves 2)

60ml Pinkster Gin

20ml Rosé Vermouth (I used The Starlino)

40ml Homemade blueberry syrup*

15ml Fresh lemon juice

Prosecco

In a cocktail shaker, combine all but the Prosecco and shake well with ice. Double strain into a champagne flute and top up with the fizz. Garnish with a lemon twist or a few blueberries.

*To make the syrup, simply add sugar, water and blueberries to a saucepan and heat gently. Muddle the blueberries to release more flavour. Stir until the sugar has dissolved. Take off the heat, cover with a lid and leave to sit for 30 minutes to an hour. Strain and store in the fridge.

Raspberry Caipiroska

50ml Vodka

30ml Pinkster Jam Cocktail Mix*

Half a lime (in wedges)

Ice (ideally crushed)

Muddle the lime together with the cocktail mix. Add vodka and crushed ice. Give it a stir and garnish.

*The cocktail mix is thick and hard to measure so I just ended up pouring it straight into the glass. You don’t need too much as it has a strong flavour.

Pinkster Aperitivo

40ml Pinkster Gin

25ml Campari

20ml Pinkster Winter Cocktail Mix*

Dash of lemon juice

15ml Cointreau

Mix all ingredients in a cocktail shaker with ice. Double strain into a coupe (or a fancy teacup) and garnish.

*Like the Jam Cocktail Mix, this is thick and hard to measure so adjust to taste. You could always replace this with raspberry jam, although I do recommend the Winter Mix as it is absolutely delicious!

Pinkster gin tea cocktail

Cream of Pink

40ml Pinkster Gin

15ml Pinkster Gin Jam (adjust to taste)

15ml Fresh lime juice

10ml Maraschino Liqueur (I used Luxardo)

30ml Coconut milk

Shake all ingredients in a cocktail shaker with ice. Strain into an ice-filled tumbler and garnish with frozen berries.

Pink gin cocktail

Margarita Jam

50ml Tequila Blanco (I used Rooster Rojo)

20ml Pinkster Winter Cocktail Mix (adjust to taste)

15ml Cointreau

25ml Fresh lime juice

Coconut water

In a cocktail shaker, combine all but coconut water and shake well with ice. Strain into an ice-filled tumbler and top up with coconut water. Garnish with frozen berries.

Berry Margarita

Pink for Tough Guys

30ml Pinkster Gin

20ml Amaro Meletti

5ml Zucca Rabarbaro

10ml Fresh lemon juice

2 Strawberries

Red berry tea (with sugar)

Brew a small cup of tea and add sugar. Let it cool. Muddle the strawberries in the shaker and add all remaining ingredients. Shake well with ice. Double strain into a coupe (or a fancy teacup) and garnish with a lemon slice.

Pinkster Gin cocktail in a tea cup

Pink Rose Gin

50ml Pinkster Gin

25ml Fresh lime juice

2 tsp Brown sugar

Dash of rosewater (go easy on it as it can be very strong)

5 Raspberries

Soda

Ice

In a rocks glass muddle raspberries with sugar and lime juice. Add gin and rosewater, stir gently and add ice. Top up with soda and garnish with rose petals and raspberries. You can also make a jug of it and pour into champagne flutes. Personally, I like the raspberry bits in my cocktail, but you can always strain the mixture before serving for a less messy-looking drink.

French Kiss

35ml Pinkster Gin

25ml Raspberry liqueur*

15ml Lemon juice

Dash of sugar syrup (optional)

Prosecco

Shake all but Prosecco in a Boston shaker. Strain into a champagne flute and top up with Prosecco or other sparkling wine. Garnish with a raspberry.

*The liqueur can be replaced by raspberry syrup, but in that case skip the plain syrup altogether.
